<p>Interesting name for this tea.  I don&#8217;t know the reasons behind such a name, but I&#8217;ll take a stab at it.  First of all, it is a white silver needle tea flavoured with Jasmine, so possibly this is where the &#8220;white&#8221; came from.</p>
<p>When we hear of tiger, we think of something that is fierce, strong, powerful;  East Pacific&#8217;s White Tiger is none of these things, at least not at first; indeed the word &#8220;white&#8221; in front may bring ideas of calmness, clean, mellow, and softness.  The jasmine flavour is natural tasting, not artificial.  It is very fresh, things I would find synonymous with the word &#8220;white.&#8221;</p>
<p>Or perhaps the moniker &#8220;White Tiger&#8221; has more to do with the physical description of the tea – &#8220;white&#8221; or clear infusion, white pekoe on dark green buds creating a white tiger stripe-like image.  It is a fitting name.  Like a tiger waiting to pounce, the jasmine flavour does not come out straight away, but once it comes out, the taste lingers, and seems to get increasingly more intense.  The jasmine flavour is not as &#8220;fierce&#8221; or &#8220;strong&#8221; as a lot of the jasmine teas available today that are just in-your-face overpowering but rather is a &#8220;white&#8221; :&#8221;fierce,&#8221; a tempered fierceness if that makes any sense.  I like and prefer this to the former jasmines.</p>
<p>I steeped it according to the instructions on the website at a temperature of 175F for 1-2 minutes.  I think they have these directions spot on as you get to taste the tea right at the moment where there is a pause if you will and then the jasmine flavour emerges out of the leaf and lingers sweetly in your mouth thereafter as it intensifies.  For those of you looking for something different in the way of Jasmines, I would definitely recommend this.  If steeped correctly it will taste unlike any other Jasmine you&#8217;ve ever tasted.</p>

<p>I approached this in their suggested manner, using 4g of leaf, 95C water, doing multiple steeps, starting at 20 seconds per steep.  The dry leaf appears to be tightly compressed, consisting of mostly dark leaves, with a smattering of light silver-needle like buds here and there.  There seems to be a higher than usual proportion of leaf to stem ratio, favouring the leaf side.</p>
<p>The scent of the dry leaf is earthy, but raw.  A definite scent of dried hay, or drying grass on the lawn.  I can also detect a slight fruity sweetness, like ripening peaches.</p>
<p>1st steep &#8211; just a quick rinse.</p>
<p>2nd steep &#8211; 20 seconds.  The scent of the leaf on the lid of the pot is wet hay, and the color of the liquor is a rich golden yellow &#8211; on the lighter side, not dark at all.  The scent is raw, and already triggering a drooling response <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   The taste is very light, and a bit flat.  In the mouth it is cooling and fresh, sliding off the tongue, not coating it.  The most interesting characteristic is the cooling sensation &#8211; telling me that it is a high-mountain Puerh.</p>
<p>3rd steep &#8211; 20 seconds.  The scent is much sharper, with deeper tones.  I think this is giving us a hint of what we will see in 3-4 years as it ages, with a sweetness coming out to play.  The astringency is starting to show up &#8211; but still playing a background role.</p>
<p>4th steep &#8211; 20 seconds.  The liquor is still the color of golden nectar, but starting to turn slightly cloudy.  It seems to have a bit less flavour than the 3rd steep, but otherwise still the same characteristics.</p>

<p>5th steep &#8211; 1 minute.  I decided to up the steeping time, as it seemed to be getting close to washed out.  At 1 minute for the steep, the color is a bit lighter, but the astringency is starting to come out.  I can feel it on the sides of the tongue, and a slight tingling in the middle of my tongue.  The flavours are still sweet, slightly fruity, and cooling in the mouth.  A very clean taste.</p>
<p>6th steep &#8211; 1 minute.  Now this is what I was waiting for.  All of a sudden, the flavour has become very complex, and strong, with a biting feeling in the back of the throat.  My tongue is definitely tingling now, and the sweetness has reached an almost candy flavour.  It is not as cooling, but there is more depth and character to it now.  This is how I envision it in 7 to 8 years from now. This is the steep that I would like to freeze it on &#8211; really loving it right here!</p>
<p>7th steep &#8211; 1 minute.  Back to about where the 5th was.  Lighter flavour, sweetness, but definitely starting to feel a bit washed out.</p>
<p>You could probably continue on and easily get another 4-5 steeps out of this before you entirely lose the flavours.  As a first year raw puerh &#8211; I would say that this is probably going to age very well, the flavours are beautiful and cool, like a high-mountain spring running through a peach orchard.  As it ages and gains complexity, it will only get better, I am sure!</p>
<p>As always, Canton Tea never fails to impress.  Whether you want to enjoy it young, or let it age and enjoy it later, this beeng cha will not disappoint!</p>

They know they supply top-of-the-line stuff, and they&#8217;re willing to put their money where their cup is. Given what I&#8217;ve seen of their selection, I can believe it. How many vendors out there carry both a Chinese yellow tea and a Darjeeling white? Answer: Not many.</p>
<p>I was elated to have received a sample of their Gold Flake. It was actually one I was eyeing for some time once their name came to my attention. It&#8217;s no secret that any tea with the word &#8220;gold&#8221; in the title instantly makes my ears perk. (My ears shouldn&#8217;t be able to do that.) To date, my absolute favorite black tea is Yunnan Golden Needles – the younger, the better. While this didn&#8217;t look like a smattering of tippy gold buds, it wasn&#8217;t an ordinary Dian Hong (Yunnan black) either.  There was an almost-even distribution between dark, curled leaves and gold-tipped ones. That and the luscious smell – oh my! It was like freebasing honey off an oak tree covered in muscatel spice. I found no difference between its aroma and some Golden Needles I&#8217;ve tried.</p>
<p>Brewing instructions called for a five-minute steep in 212F water (basically boiling). I was at work when I tried this, so I didn&#8217;t adhere to a rigid preparation. Usually, with a finer black tea, I only steeped for three minutes. With &#8220;gold&#8221; varieties, I lowered the water temp to 190F-195F. The hot water I had access to was about what I preferred, but I had no way of properly eyeing the time. So, I guessed as best I could. It seemed like five-or-so minutes.</p>
<p>Unlike Yunnan Gold Bud (or Jin Cha) tea, this brewed up rather dark; I would almost say red-brown. The scent echoed the dry scent, though – a woody, earthy, smoky, somewhat malty, and honey-like aroma. While it smelled characteristically Yunnan, there was also a robust, Assam-like profile to it. This definitely showed in the taste. I expected the usual nectary excellence like Yunnans of yore, but I wasn&#8217;t anticipating the sheer kick to the tongue that came after. Malt was there in force followed by an astringent kick at the finish line. More often than not, I don&#8217;t care for dryness in black teas. I usually associate that sensation with lower-quality products. That wasn&#8217;t the case here. Like with a hearty Assam, the astringent trail added to its already-masculine character. And also like an Assam, it packed a caffeinated wallop that&#8217;d roust even the most stubborn of sleepers. This is a meaty, morning tea if ever there was one.</p>

Tasters Review:<br />
When I first sampled this I noticed many other reviews online from others that didn&#8217;t particularly like this.  I, however, didn&#8217;t think it was all that bad.  I don&#8217;t think I would purchase it for myself in large quantities but I gave it a little more credit than others seemed to have given it.  This wasn&#8217;t very gingery – which is fine by me – I do know that White Ginger is supposed to be mellower than regular ginger – but I think this is regular ginger and it&#8217;s in white tea&#8230;so&#8230;perhaps the white tea toned down the heavier ginger flavor. Regardless – the ginger isn&#8217;t harsh. It&#8217;s a bit chewy for a white tea but the flavor overall isn&#8217;t very memorable. The taste of this flavored white is not bad&#8230;it&#8217;s just not what I would call stunning either!  Perhaps people were looking for that stereotypical ginger taste &#8211; I guess I can understand their confusion because this flavor isn&#8217;t your typical ginger taste.  I, however, am grateful it wasn&#8217;t overly gingery&#8230;that factor I will say I enjoyed about this offering.</p>

<p>Dry smell reminds me of the ginger white pear tea. Cute lil’ rose buds are in this tea. Flowery teas are not to my liking, so I will see how this tasting goes.
<p>A 2 minute infusion yields a pale infusion, the first sip is good…I can taste the coconut and the vanilla and the ratio is just right for both ingredients. The vanilla is a natural taste, not fake like so many vanilla flavored teas.

<p>Opened the sample and was surprised by how little was in it.  The directions only say how long to steep it and how hot the water should be, doesn&#8217;t tell me how many cups this sample is meant to make.  Looks like about two teaspoons of tea in the packet.  Going to try for two cups&#8230;</p>
<p>Opened the pouch and the dry white leaves are really full and long, mostly buds.  Can&#8217;t see the melon in it though.  Took a deep breathe and inhaled.  The smell is nasty.  It smells like an over ripe (rotten) honeydew melon.  Ugh.  Thinking the scent will lighten, I poured boiling water over it and steeped it for two minutes.  Brew is a nice golden, honey color, smell is still horrid.</p>

<p>I discovered upon opening the package that the leaves of this tea were considerably larger and more ‘whole&#8217; than the leaves of the First Flush from Goomtee Estate that I also sampled from this same company. These leaves were an interesting and attractive-looking mix of dark green and silver, almost as though they were the buds of a silver needle white tea rather than a black tea. But then supposedly Darjeeling teas get fermented less than most blacks, so it makes sense, I guess.</p>
<p>The smell was sweet and hay-like with some floral notes, though brewed it took on a toastier aroma. It had a more typical Darjeeling flavour than the Goomtee first flush did – resplendent with muscatel flavours, though with considerably less of the drying astringency you&#8217;d taste in a later-picked Darjeeling. It was sweeter too, which becomes more noticeable as the tea cooled, and it had a nice, full flavour that lingered in the mouth and kept me from forgetting about it. As it cooled it also took on some fruity characteristics, with an interesting nutty undertone.</p>
<p>Of the two First Flush Darjeelings I&#8217;ve tasted now I think this one is my favorite of the two, although in my opinion both are excellent, complex, and interesting teas.</p>
<p>I gave this a Steepster rating of 87/100.</p>

<p>After tasting and loving Shanti Tea&#8217;s Cherry Sencha, I was excited to try their silver needle, but I was rather disappointed.  Well, I guess whether or not you will like it, depends on your expectations.  To me their silver needle is just too far off from the characteristic mildly sweet, light signature tastes of the silver needle.  If I were being nice, I could say Shanti Tea&#8217;s silver needle has a unique taste, or realistically I could say they are way off track.</p>
<p>Inspection of the dry leaf shows dark green backing to white down, buds are quite small.  The aroma of the dry leaf has a sort of spice or hints of fragrance of like a flavoured tea.</p>
<p>I steeped 5 grams of leaves in 600ml of water for 2 minutes at 80 degrees Celsius.  The resultant infusion was light yellow in colour and smelled like cooked spinach with ginger.</p>
<p>Silver needle is a very high quality, expensive tea; with picking of only the young, top buds of the tea bush.  The taste is typically light, sweet and delicate.  Tasting this was as if I had Tropicana 100% pure orange juice and compared it to orange Kool Aid.  I liken this silver needle to the Kool Aid.  It is like artificial white tea flavouring; it did not taste natural at all.  It tasted like something was added, some flavouring, hints of ginger???  If I had to compare it to a like tea I would say it is similar to Indonesian white tea.  Both have that sort of &#8220;artificial&#8221; taste that does not seem to come from the buds.  It is still drinkable, but don&#8217;t expect exceptional silver needle quality here.  I&#8217;m going to have to pass on this one.</p>
