<p><img class="alignleft size-full wp-image-2505" style="margin-left: 5px; margin-right: 5px;" title="canton-tea-special-puerh" src="http://www.itsallabouttheleaf.com/wp-content/uploads/canton-tea-special-puerh.jpg" alt="" width="200" height="200" />Canton Tea recently asked if we could review their Special Puerh, produced for them a small artisan farm in Yunnan Province.  They state that it is made from big leaf maocha is from the Big Tree, Arbor varietal, and consists of Grade 6 leaves and above, with some small buds.</p>
<p>I approached this in their suggested manner, using 4g of leaf, 95C water, doing multiple steeps, starting at 20 seconds per steep.  The dry leaf appears to be tightly compressed, consisting of mostly dark leaves, with a smattering of light silver-needle like buds here and there.  There seems to be a higher than usual proportion of leaf to stem ratio, favouring the leaf side.</p>
<p>The scent of the dry leaf is earthy, but raw.  A definite scent of dried hay, or drying grass on the lawn.  I can also detect a slight fruity sweetness, like ripening peaches.</p>
<p>1st steep &#8211; just a quick rinse.</p>
<p>2nd steep &#8211; 20 seconds.  The scent of the leaf on the lid of the pot is wet hay, and the color of the liquor is a rich golden yellow &#8211; on the lighter side, not dark at all.  The scent is raw, and already triggering a drooling response <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   The taste is very light, and a bit flat.  In the mouth it is cooling and fresh, sliding off the tongue, not coating it.  The most interesting characteristic is the cooling sensation &#8211; telling me that it is a high-mountain Puerh.</p>
<p>3rd steep &#8211; 20 seconds.  The scent is much sharper, with deeper tones.  I think this is giving us a hint of what we will see in 3-4 years as it ages, with a sweetness coming out to play.  The astringency is starting to show up &#8211; but still playing a background role.</p>
<p>4th steep &#8211; 20 seconds.  The liquor is still the color of golden nectar, but starting to turn slightly cloudy.  It seems to have a bit less flavour than the 3rd steep, but otherwise still the same characteristics.</p>

<p>5th steep &#8211; 1 minute.  I decided to up the steeping time, as it seemed to be getting close to washed out.  At 1 minute for the steep, the color is a bit lighter, but the astringency is starting to come out.  I can feel it on the sides of the tongue, and a slight tingling in the middle of my tongue.  The flavours are still sweet, slightly fruity, and cooling in the mouth.  A very clean taste.</p>
<p>6th steep &#8211; 1 minute.  Now this is what I was waiting for.  All of a sudden, the flavour has become very complex, and strong, with a biting feeling in the back of the throat.  My tongue is definitely tingling now, and the sweetness has reached an almost candy flavour.  It is not as cooling, but there is more depth and character to it now.  This is how I envision it in 7 to 8 years from now. This is the steep that I would like to freeze it on &#8211; really loving it right here!</p>
<p>7th steep &#8211; 1 minute.  Back to about where the 5th was.  Lighter flavour, sweetness, but definitely starting to feel a bit washed out.</p>
<p>You could probably continue on and easily get another 4-5 steeps out of this before you entirely lose the flavours.  As a first year raw puerh &#8211; I would say that this is probably going to age very well, the flavours are beautiful and cool, like a high-mountain spring running through a peach orchard.  As it ages and gains complexity, it will only get better, I am sure!</p>
<p>As always, Canton Tea never fails to impress.  Whether you want to enjoy it young, or let it age and enjoy it later, this beeng cha will not disappoint!</p>

<p>Here at Its All About The Leaf, we were recently contacted by Adagio &#8211; asking if we were interested in reviewing their new line of gourmet tea bags.  Now, I have been following Charles Cain of Adagio on twitter, and on the tearetailer.com website, and on several occasions the issue of loose leaf tea vs. teabag has arisen.  Often it is brought up by new &#8220;tea retailers&#8221; in a bit of a snobby attempt to differentiate themselves from other store-bought teabag companies.  Claims of the non-teabag faction include:</p>
<p>
- teabags contain only fannings &#8211; the tea &#8220;leftovers&#8221;<br />
- the teabag interferes with the taste of the tea<br />
- teabags are for old ladies and young children not hip middle agers<br />
- only loose leaf tea will give you the full taste and experience of tea.</p>
<p>I have to admit, that at one time, I thought all of these things exactly.  However, since starting this website, I have had a chance to review tea in all different forms and fashions, from teabag to loose, to dried, even baked in chocolate.  And I have come to the conclusion &#8211; it is not the container the tea is in, it is the quality of tea.</p>
<p>And with that, I come back around to Adagios&#8217; offering.  This collection includes Jasmine Pearls, Silver Needle, Dragonwell, Wuyi Oolong, Golden Yunnan and Oolong Goddess.  Each tea is packaged individually in a sealed wrapper, and in each wrapper is a teabag *GASP* containing just enough for one cup of tea.  The tea bag its self is a good quality, pyramid teabag, allowing plenty of room for the tea to expand as it infuses.</p>
<p>Now, lets compare these teabags to the most popular claims by the anti-bag groups:</p>
<p>1.  Teabags contain only fannings -> not here folks.  The Jasmine Pearls for example, contained ACTUAL Jasmine Pearls &#8211; kind of a waste in my opinion, since it is such a high quality tea that&#8217;s neat to watch unfurl, but it is clear, that these are no fannings.  The same goes with the rest of the teas &#8211; we are talking full leaf tea, not broken down old leaf.</p>
<p>2.  The teabag interferes with the taste of the tea -> what are you, a supertaster?  The fact is, 75% of people do not even have the capacity to tell the difference between good and bad tea, never mind to detect if a teabag interferes with a teas taste!  I will tell you, I consider myself relatively picky with tea, that comes with the territory of drinking it daily and in great variety, and in not one single tea I had from this collection, could I taste the &#8220;teabag&#8221;.</p>
<p>3.  Teabags are for old ladies and young children -> I am neither.  Nor is my family, or friends.  All of them mix teabags and loose leaf.  Lets be real, how many old ladies do you know that will pay $19.00 for 30 bags of tea &#8211; not many I warrant.  And kids?  Rarely will they even do the buying.  Lets just drop this myth entirely, it smacks of 50&#8242;s England, and I have never seen anyone in North America drink tea with a pinky out!</p>
<p>4.  Only loose leaf tea will give you the full taste and experience of tea -> nope.  That is plain old tea bigotry.  Anyone who says this without qualification is either willfully ignorant, or is trying to sell you something.  The reality is the quality of the TEA is what gives you the taste and experience &#8211; not the delivery mechanism.  I have had loose leaf that is garbage, and teabags that sing (i.e. the Adagio Silver Needle in this collection) &#8211; it is about the tea folks, not the wrapper.</p>
<p>So &#8211; now that we have dispelled the myths, lets again, focus on this collection.</p>
<p>Jasmine Pearls &#8211; the taste is exactly what I would expect out of a good quality Jasmine tea.  I enjoyed it very much, but the Pearls part is a bit of a waste since you cannot really see them unfurl.  From a marketing point of view, I get it, but the same quality Jasmine tea would have accomplished the same experience.  None the less &#8211; I loved it, it reminded me of my youth at home in the kitchen with my Grandmother!</p>
<p>Silver Needles &#8211; By far, I am a Silver Needle guy.  No matter where I am, if Silver Needles are on the menu, I am buying/drinking/taking it home.  I have had some stinkers, but this one is NOT!  I loved every drop, and even got 3 good steepings out of it.  There would have been more, but the teabag mysteriously disappeared in a whirl of kitchen cleaning&#8230; <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>Dragonwell &#8211; I am not a huge Dragonwell fan, but enough so that I know good green when I taste it, and again, this is it.  Adagio has not skimped on the tea part of these teabags!</p>
<p>Wuyi Oolong &#8211; Oolong can be a lifelong study.  There are so many kinds, from a greener Oolong to a dark, rich Oolong, to buttery light Oolongs.  Wuyi is one of the more recognizable (see a pattern in this collection?) and is a good mid-range Oolong, appealing to a wider audience than say, a Formosa Oolong.  It tasted&#8230; just as it should.  No teabag flavours, no bitterness, just smooth, Oolongy goodness.</p>
<p>Golden Yunnan &#8211; a Chinese black &#8220;standard&#8221; &#8211; it is again, a good mid-range selection that appeals to a wide variety of palates.  You get the boldness of a black tea, without the over-astringent flavours of a poor quality Black.  I would have liked to see this replaced with a good Darjeeling or Assam, but to keep with the theme, it does work <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Finally &#8211; Oolong Goddess.  To be honest, I have not had a chance to try this out of the sampler, but I can assure you, that it will be a good example of this kind of Oolong, it will be fully leafed, and it will not suffer in the least for being presented in a teabag!</p>
<p>The Gourmet Tea Collections from Adagio are not meant for established, hard core loose leaf tea drinkers, nor are they meant to replace Adagios&#8217; high quality loose leaf tea offerings.  As Charles Cain has pointed out in the past, too many people are &#8220;scared&#8221; of loose leaf tea, I think because it has been made out to be too exclusive a club.  These tea bag collections are intended to assist people in the transition of poor quality teabags, to loose leaf, being the intermediate step along the way.  I think that they accomplish that admirably.  High quality tea in a teabag is NOT a new concept, but the presentation of these in a retail environment like Adagio is doing will only serve to convert more people to good quality tea, and for that, Adagio gets kudos for a great effort, and I am looking forward to more collections just like this!</p>

<p>I have tried a lot of Rooibos tea.  I have had a lot of Fruit Tisanes.  Over time, they can tend to blur together into a single impression.  For Rooibos teas, there is almost always a sweetness, no matter the flavouring.  For Fruit Tisanes, tangy.  So when we received a sample of Cranberry Crush from East Pacific Tea Company, I was anticipating that this was going to be just another flavoured Rooibos.</p>
<p>
In cas you had not guessed, this tea is a combination of Rooibos, Cranberries, Orange Peel and Hibiscus.  When you look at this tea, you can see all of these ingredients mixed together.  If I had not dug into the tea, and read the ingredients, I never would actually have noticed the Rooibos.  There seems to be a very small ratio of it in this tea, leaning it more towards a supporting role in a Fruit Tisane, rather than the dominant role in a Rooibos mix.</p>
<p>
The smell of the tea is strongly orange, with an undertone of Cranberries.  With Cranberries, Orange and Hibiscus, I expected the tang that you get from a Fruit tea, but I was unsure of how the Rooibos was going to show up in this.</p>
<p>
As it turns out, I need not have been afraid.  This tea brings the best of a Rooibos, with an underlying supporting sweetness, and the best of a Fruit Tisane, with a tart fruity cranberry flavour.  The Cranberry is most definitely the star in here, but the orange does not back down either.  The Hibiscus plays a background role, which is just fine with me, as it is not my favorite addition to a blend.</p>
<p>
Hot, I like this tea, but cold, I can see a whole new window of opportunity arise.  I know even without making a cold version, that this tea will shine as an iced tea.  Typically I make an &#8220;Arnold Palmer&#8221; iced tea, blending 50/50 with lemonade, but this one I think I will have to try as-is.</p>
<p>
Overall, this is a great tea for someone that is not a Rooibos lover, but also may be tired of the typical Fruit tea.  I enjoyed this offering from the East Pacific Tea Company, and I am looking forward to digging into some of their other samples!

<p>There seems to be more and more tea infused chocolate products coming to market.  We have reviewed Matcha Chocolates here before, and this time, we have the chance to review some tea infused chocolates from a local company, Tea and All Its Splendour.</p>
<p>The owner of the company, Raelene Gannon, has a professional background in the chocolate and confection industry, and is also a certified tea sommelier.  Combining the two, she has created Chocolate t &#8211; tea infused chocolates!</p>
<p>We received a large sampler box from Raelene, a mix of packaged-for-sale chocolate bars, and loose sampler type squares.  There was plenty for tasting here, so keep an eye out for future reviews from some of our other reviewers, who have it in their expert hands (mouths?) now <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   In the sampler was Dark Chocolate Raspberry Black Tea, Dark Chocolate Ginger Black Tea, Milk Chocolate Temple Chai Tea, Milk Chocolate Passion Fruit Green Tea, Milk Chocolate Cream Earl Grey Tea and White Chocolate Matcha and Sencha.  They all smelled incredible, and while I know personally that the While Chocolate would be my personal favorite (without even tasting it!) I also enjoy Chai blends, so that is the first one I decided to go with.</p>
<p>The very first thing I noticed was that the chocolate had bits throughout, and as I looked at all the other chocolates, I noted them in those ones as well.  As it turns out &#8211; these are the actual tea leaves!  Raelene not only infuses the chocolates with the tea flavours, but also the actual loose leaf tea its self &#8211; what a unique concept!  The chocolate its self is in a bar &#8211; that is, flat with ridges, not truffle type shapes like the Matcha Chocolat ones were.  This makes it more commercially viable, and probably easier to produce consistently.</p>
<p>The scent I get from the chocolate is that of a fine Milk Chocolate, with a bit of a clove&#8217;y, spicy scent &#8211; what I would expect from a Chai &#8211; but of course, more chocolaty <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   I am the kind of person that eats chocolate by melting it in my mouth &#8211; I love the feeling of smooth chocolate on my tongue, and I did exactly that with this chocolate.</p>
<p>The first taste that hits you is the smooth, sweet milky chocolate.  You can tell that this is a good quality chocolate base, as it is not waxy or tasteless at all.  The milk chocolate taste is quickly followed up with a spicy flavour &#8211; I would not say that it is clearly relate-able to a chai blend &#8211; since there can be such a variety of this type of tea, but it is more of a sense of spiciness, but not in a hot, burn your mouth way, but in an exotic, not familiar to my everyday meal palate, kind of way.</p>
<p>The next thing that strikes me are the crunchy &#8220;bits&#8221; in the chocolate &#8211; which I know now is the actual loose leaf.  With my first couple of tastes, I crunched them, and found it not quite a pleasant experience &#8211; I like my chocolate smooth!  But with my second round of tasting, I let them soften in my mouth without chewing, and it released more of the chai spice flavour, which was quite enjoyable!  If you have ever eaten actual tea leaves &#8211; well, it is not a good tasting experience, but these leaves have mellowed enough to be a real treat!</p>
<p>Overall, this was a good tea infused chocolate.  I got more chocolate than tea, but it IS a chocolate, not a condensed tea.  I personally would have preferred to get more of the spiciness that you can get from a good Chai &#8211; but by the same token, this is probably would appeal to a wider audience, like an introduction to Chai.</p>
<p>This is not the only one I have sampled to date, and not my favorite of all of them, but it is a great starting point, and it is exciting to see more and more of these products coming to market &#8211; and great to see one local to Toronto! <p>When I was contacted and asked to try the Celestial Seasonings Fast Lane Black Tea, I readily agreed.  Celestial Seasonings was the very first company to respond to our inquiries when we started IAATL, and sent our very first batch of teas for review, something for which I will be forever grateful.  Celestial Seasonings Sleepytime tea is also the tea that started it all for me, back those ummhurummph years ago, when I was but a wee child of 5 or 6.</p>
<p>
Apparently, Fast Lane Tea was, a number of years ago, a tea that Celestial Seasonings discontinued.  Since then, the legend goes, fans of this tea have petitioned sufficiently to have it return, albeit for a short period of time!  This tea is ONLY available online (at <a href="http://www.fastlanetea.com" target="_new">http://www.fastlanetea.com</a> or from Celestial Seasonings Tea Shop in Boulder (see the website for details).</p>
<p>
Now, to the tea.  This tea is a caffeine packed punch in the gut.  With a black tea base from Indonesia, we get cinnamon, eleuthero (a variety of ginseng), licorice, nutmeg, and an EXTRA shot of caffeine!  This is the very first time that I have see caffeine actually listed as an ingredient!</p>
<p>
The smell is spicy/sweet.  I can detect the cinnamon and licorice for sure, not so much on the ginseng or nutmeg however.  Brewed up, you get what you would expect, a dark liquor, and almost Christmas Spice-like scent to the tea.</p>
<p>
It tastes pretty much what you would expect &#8211; not particularly strong, a very middle of the road, spicy with sweet notes of the licorice.  It is not an amazing, blow me away Darjeeling/Assam/Ceylon single estate loose leaf tea flavour with complexity, but it is also not a bitter, pour it on the neighbors weeds to get rid of them tea.  Pleasant and non-offensive, a little passive for my personal tastes, but certainly of higher quality than you would expect from a bagged store shelf tea!</p>
<p>
As for kick?  Well I wrote this review in 5 minutes at 3:00am, after drinking the tea at 3pm &#8211; what do you think?  Seriously tho &#8211; I can sense that it does have more caffeine than I am used to in a black tea, but I don&#8217;t get the frenetic mind warp and massive crash that I get from a triple espresso either &#8211; this would be a great tea to study with &#8211; students take note!</p>
<p>
Bottom line &#8211; while it is not a &#8220;don&#8217;t miss this tea&#8221; it is well blended and will appeal to a wide range of people &#8211; keep it in the cupboard for when you need a boost.</p>

<p>Recently we received a bunch of samples from Tao Tea Leaf for reviewing.  Taos is an online shop, but also has a physical presence in downtown Toronto, Ontario, Canada (for our US friends <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> ).</p>
<p>
I had been comtemplating the reviews of Taos teas for a while, when I got an invitation for a Pu-erh tasting with a bunch of other IAATL reviewers, and was surprised to hear that it was at Taos!  Well, needless to say, I accepted, and was VERY glad that I did!  Without going indepth, lets just say it was an amazing morning with much Pu-erh, from this years Sheng, to a 10 year old Sheng worth an estimated $300/100g &#8211; a real honour!  All this motivated me to do a review for Tao myself.</p>
<p>
I chose the Golden Monkey, because it is not a tea that I have ever had before.  This required a bit of research, and I have found that Golden Monkey is generally considered a high grade black tea grown in the Fujian Province of China.  It is from a special variety of the tea bush that, after withering, some leaves become golden in color, making the finished product a very beautiful mix of black and gold leaves.</p>
<p>
The sample from Tao matches this description.  I found the leaf to be tightly rolled, almost needle like in it&#8217;s delicacy.  The golden leaves were beautifully mixed in with the black, and definately of higher volume that the black leaves.  Typically, this tea is picked during the spring season (April to May), giving it a fresh scent and flavour.</p>
<p>
The liquor brews up golden in color, lighter than an Assam black, but darker than a Da Hung Pao Oolong.  It&#8217;s scent is that of a light Assam black, with honey like notes.  It reminds me of the (now closed) Simple Leaf Honeybee Oolong, both in scent and with the color of the liquor &#8211; a favorite tea of mine, so I was very much looking forward to tasting!</p>
<p>
The flavor is tough to describe, so I am going with complex <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   It is light and smooth, cooling in the mouth, with malty, chocolate and honey tones.  There is an underlying sweetness, but with an edge of astringincy to it, very slight, but coming forward as the tea cools.  The most notable feeling I get is an icy after &#8220;taste&#8221; in my mouth!  That leads me to believe this would also be a great iced tea.</p>
<p>
I love the flavour of this tea.  It is one that you will want to have cup after cup, as you explore the flavours in it.  Each sip brings forth different feelings, and the flavours continue to unfold the more you drink.  This tea is like a new friend, the more time you take with it (them) the more you will get to know it (them) and enjoy its (their) company <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> .</p>
<p>
This is what I expect from Tao.  After the amazing Pu-erh&#8217;s, and an incredible Da Hung Pao (if I can tear myself away from just enjoying that one, I will review it!), this further confirms to me that Tao knows what he is doing with his tea selection.  If you live in Toronto, go and see him!  If you don&#8217;t, then check out his website, or even call him on the phone, I guarantee you will not be disappointed!

<p>Canton Tea was nice enough to send a box of tea infused chocolates as a thank you, and wow, what a thank you it is!</p>
<p>It seems almost daily that there are more and more tea infused chocolates, chocolate bars and other treats available.  To date, I have only tried a couple of tea infused chocolate bars, and what they are lacking is the purity of taste.  To me, if you are going to mix chocolate and tea, you need to highlight the best of both, and not overwhelm with one or the other. This is where the chocolates that Canton Tea sent me really excel.</p>
<p>These chocolates are made by hand, by Katie Christoffers in the UK. The name of her company is Matcha Chocolat.  Her chocolates are made with only high quality chocolate from France, and fresh, high quality teas and other ingredients.  Canton Tea has partnered with Katie, and is offering a box of her chocolates in their Tea and Chocolate Gift Pack &#8211; and now is the time to get it! <p>On to the chocolates.  The box contained 3 Mint &#038; Green Tea, 3 Jasmine Pearl, 3 Earl Grey, 3 Matcha and 4 Masala Chai Caramel hearts.  I will go through each of the briefly.</p>
<p>Mint and Green Tea: I am a big fan of mint, and this does not disappoint. There is a nice minty freshness, with a bit of background Green Tea, there but not there, with a wonderfully smooth chocolate flavour.  Think After Eight with a touch of seaweed (in a nice way, not nasty <img src='http://www.itsallabouttheleaf.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Jasmine Pearls:  This combines my two favorite comfort flavours &#8211; Jasmine and White Chocolate.  Not at all flowery, it is just perfect.  As the chocolate melts I can feel the tension flowing out of my body.  No sharing this one!</p>
<p>Earl Grey:  EG is not my favorite tea (something about the bergamot), however, blended with a nice dark chocolate shell and chocolate ganash, these work together to create a creamy taste with a hint of astringency, both from the Earl Grey and Dark Chocolate &#8211; pleasant, if a bit heavy in the mouth for my tastes.</p>
<p>Masala Chai Caramels:  Milk chocolate, and Masala Chai infused Caramel &#8211; uhh, yum?  So far, every spicy tea infused chocolate I have enjoyed, it is not jump out at you O M G I cannot believe it, but rather a more curious, &#8220;hmm, I like this, I just don&#8217;t know why&#8221; kind of feeling.  Tasty!</p>
<p>Matcha:  I have mixed feelings on this.  First of all, the chocolate is divine.  I am however, having a very hard time picking up much in the way of Matcha.  Matcha is generally bitter, with the edge taken off by sweets.  I am &#8220;feeling&#8221; the Matcha, but not really &#8220;tasting&#8221; it.  It is not bad, just not, well, what I expected.  Not my favorite, would pass on this one personally.</p>

<p>Overall, this box of sweets is a must not miss!  Thus far it is my favorite box of tea infused chocolates.  You can taste the tea in the chocolate, but are not overwhelmed by either &#8211; they blend smoothly and leave you with pleasant afterglow.</p>
